July 02 People over 35 should be deadPeople over 35 should be dead. Here's why. According to today's regulators and bureaucrats, those of us who were kids in the 40's, 50's, 60's, or even maybe the early 70's probably shouldn't have survived. Our baby cribs were covered with bright colored lead-based paint. We had no childproof lids on medicine bottles, doors or cabinets, and when we rode our bikes, we had no helmets. (Not to mention the risks we took hitchhiking.) As children, we would ride in cars with no seat belts or air bags. Riding in the back of a pickup truck on a warm day was always a special treat! We drank water from the garden hose and not from a bottle. Horrors! We ate cupcakes, bread and butter, and drank soda pop with sugar in it, but we were never overweight because we were always outside playing. We shared one soft drink with four friends, from one bottle, and no one actually died from this. We would spend hours building our go-carts out of scraps and then rode down the hill, only to find out we forgot the brakes. After running into the bushes a few times, we learned to solve the problem. We would leave home in the morning and play all day, as long as we were back when the street lights came on. No one was able to reach us all day. NO CELL PHONES!!!!! Unthinkable! We did not have Play-stations, Nintendo 64, X-Boxes, no video games at all, no 99 channels on cable, video tape movies, surround sound, personal cell phones, personal computers, or Internet chat rooms. We had friends! We went outside and found them. We played dodge ball, and sometimes, the ball would really hurt. We fell out of trees, got cut and broke bones and teeth, and there were no lawsuits from these accidents. They were accidents. No one was to blame but us. Remember accidents? We had fights and punched each other and got black and blue and learned to get over it. We made up games with sticks and tennis balls and ate worms, and although we were told it would happen, we did not put out very many eyes, nor did the worms live inside us forever. We rode bikes or walked to a friend's home and knocked on the door, or rang the bell or just walked in and talked to them! Little League had tryouts and not everyone made the team. Those who didn't had to learn to deal with disappointment. Our actions were our own. Consequences were expected. The idea of a parent bailing us out if we broke a law was unheard of. They actually sided with the law. Imagine that! This generation has produced some of the best risk-takers and problem solvers and inventors, ever. The past 50 years have been an explosion of innovation and new ideas. We had freedom, failure, success and responsibility, and we learned how to deal with it all. And you're one of them! Congratulations!
June 07 Lucy's Egg Free SaladFor this one, all I have to say is... OH MY GOD, this stuff is so good.
Lucy's Egg Free Salad
This is a recipe for an eggless egg salad.
I DID use real mayo instead of the soy stuff (I believe there is such a thing as TOO much soy and there is proof that TOO MUCH soy can cause health problems) and I added just a bit of dry mustard to the mix, just for kicks... but other than that stuck right with the recipe.
TRY IT! You have nothing to lose, but you have the experience to gain (AND I SWEAR YOU CANt TASTE THE DIFFERENCE!)

May 14 Lemon Poppy Seed CakeOh this was SOOO Delicious. My husband ate half the cake in one sitting!!! LOL
Easy Lemon Poppy Seed Pound Cake Recipe
1/2 cup butter, melted
1 cup sugar 2 eggs, well beaten 1 tablespoon lemon juice 1/4 teaspoon salt 1 1/2 cups flour 1 teaspoon poppy seeds 1 teaspoon baking powder 1/2 cup milk 1/3 cup lemon juice
1/4 cup sugar mix together 1 cup sugar and butter.
add eggs and 1 tablespoon of lemon juice,mix well. add salt,flour,and baking powder to mixture. add milk. bake at 325 in a well greased loaf pan for 1 hour,or until golden brown. Mix 1/3 cup lemon juice,1/4 cup sugar. (Do this right after you put the cake in the oven... It gives it a chance to thicken a little.)
use a toothpick to make holes in top of cake and drizzle lemon juice and sugar mixture. over the top of the cake when removed from the oven. March 26 Katrina's Easy Fried RiceI have had requests for my fried rice recipe, so I thought I would pass it on to all my crochet friends out there. Enjoy
Katrina's Fried Rice
1 pound or more shrimp, chicken, or 1 bag frozen veggies thawed (Although I will generally add 1/2 bag thawed veggies to shrimp and chicken as well)
2 eggs
3 tbsp Soy Sauce
3 - 4 cups of cooked white, jasmine or Basmati rice (I use whatever rice I have in the fridge)
3 tablespoons garlic (optional)
1/2 tablespoon dried red chili pepper FLAKES(Optional) This is an approximate. We like meals with a little bite but not too spicy, you know how you like food... if you don't like spicy... don't use this.
3-4 green onions
Preparation
If you do not have rice prepared, do this now and do not start anything else until the rice is done and three cups are cooling. Chop the green onions and stems, sit them off to the side. Take the two eggs and whisk them with 2 tbsp of water, sit off to the side.
Cooking
Take 2 tbsp butter/margarine and place in wok or large skillet on medium heat. Add the onions and garlic and fry for just a few moments. Add the egg/water mixture and fry until eggs are just about done. Add meat or vegetables, red chili if using, and soy sauce... fry until meat is done. Finally add the rice and fry until well blended.
This recipe is EXCELLENT for getting rid of rice in the fridge (as well as veggies that are getting ready to leave their peak freshness). I always have a bag of TUCSON MIX from Safeway on hand for any oriental dish I make (Yes, I realize that Tucson and China are in two different parts of the world, but the veggies are much better than what they have in the oriental mixes!) If you have concerns about my wording, plz be sure to ask and I will try to walk you through it. I usually do not use recipes for my cooking so sometimes it is hard for me to repeat what I have done.
